Raw, cured, fermented, or long-simmered—this pop-up celebrates the freedom of cooking without boundaries. The menu is a living mystery that shifts with the day: bright, light, acid-chilled seafood, artisanal cold spreads, and herbal infusions one evening; rich, heavy, aromatic hearth-bound creations the next.
I pull from the wild, earthy traditions of the deep cold forests of Finland, but my curiosity reaches much further—navigating the vivid tropical heat of the Americas, the golden warmth of Eastern heartlands, the unmapped profiles of the African continent, or simply whatever unfamiliar ingredients capture my attention that morning.
