Entropy is a concept that threads through every aspect of physics... so what is it?

At its surface, entropy is a measure of disorder. But scratch beneath that surface and you find something that feels fundamental — a concept that connects the arrow of time to the birth of the universe, that links the information in a quantum system to the temperature of a black hole.
