Ginjo sake is what happens when a brewer decides that good isn't good enough.
Lighter. More fragrant. More alive in the glass.
We'll taste expressions of that philosophy side by side. Junmai Ginjo — pure rice, nothing else, unapologetic. And Ginjo — where a precise touch of distilled alcohol opens the aromatics into something almost floral, almost electric.
Same polish ratio. Completely different personalities. Hopefully you're going to have a favorite by the end of the night and you're going to want to argue about it. Good. That's exactly the point.
