    Here's how I make my tofu in case anyone wanted to know! Normally it is crispier because I serve it immediately.

    I use extra-firm tofu and press it for 45-60 mins. Cut in cubes or slabs. My coating mix is equal parts plain bread crumbs and Kentucky Kernel seasoned flour (available in the baking aisle in Kroger/Publix/etc.) (about 1/3C of each for one pack of tofu) and about 1T of Emeril's Original Essence seasoning. This is my favorite but you can use any spice blend. Taco seasoning is good if you want to make it into tacos. I do recommend the seasoned flour because it doesn't taste nearly as good with regular flour. Coat with the seasoning mix, no liquid necessary. I just put it in a bowl and mix it around until the cubes are coated. Fry on medium heat with a couple tbsps of regular oil. It is great with mashed potatoes or on sandwiches and I guarantee anyone who thinks they hate tofu will change their minds if they eat this :).
