Food + Fun: Okonomiyaki

Okonomiyaki is a savory pancake made with flour, eggs, shredded cabbage, meat/protein and topped with a variety of condiments like mayo, bonito, and okonomiyaki sauce. The name means 'grilled as you like it' as in many okonomiyaki restaurants in Japan, you get to cook it yourself on a hotplate at your table. Let's make some okonomiyaki! A typical recipe uses cabbage and pork belly, but we can make it however we like - let's arrange to split up ingredients so everyone gets a little something they like.
The ingredients needed are:
- Cabbage
- Tempura scraps
- Dashi
- Veggie/canola oil
- Okonomiyaki sauce (eg Okonomi Sauce/tonkotsu sauce)
- Mayo
- Bonito flakes
- Seaweed flakes
- Stuff for filling - this can be any one of the following or if you have another idea, we can add that as well: scallops, shrimp, chicken, pork belly, mochi, green onion, picked ginger, yakisoba noodles, daikon, chives, corn, bean sprouts, onion, tomato, mushrooms, bamboo shoots, kimchi, tofu
Pretty much you always want green onion, pickled ginger, and a protein, but we should get at least one kind of protein and a few veggies.
I (Megan) will take care of the batter since it needs refrigeration for an hour prior to cooking, but we'll need to split up the rest above. Let us know what you'll bring!
