Seattleite Richa Hangle, who was born in India, is the creator of the acclaimed food blog Vegan Richa. Her road to veganism is an interesting one which started with this former software developer recovering from surgery to remove a brain tumor in 2006. During her recovery she started baking, cooking, blogging and fostering rescue dogs. All that converged to lead to her to become a vegan, highly regarded recipe developer and social media influencer in the foodie-sphere.
Her recipes span the globe with dishes inspired by cuisines of the world – Indian, Mediterranean, Mexican, Vietnamese, and more. Many of her traditional recipes have been modified to make them healthier, vegan, gluten-free, and with less sugar and oil. Her well organized website arranges dishes by cuisine, category, occasion, season, holiday and dietary accommodation. Her recipes are accessible, and her food porn game is mouth-wateringly top notch! ;0)
It seems like Richa has hit her recipe stride in the last few years, so let’s choose recipes from her website/blog, rather than her two older cookbooks. She has an IG page, but posts there refer you back to her website for the recipe. The rule of thumb for our feasts is that if you bring a +1, you'll need to make two dishes or double your recipe. Also, sometimes vegan recipes will call for a small amount of vegan butter or vegan cheese. If that's something you don't want to buy for a small amount, feel free to use traditional dairy but just note that at the event for any strict vegans attending.
We’ll hold our vegan feast at Lauren's house in Kirkland, and eat outside if weather permits. Lauren's address will be sent to confirmed participants who have posted their dish by June 22nd and will be sent a few days before the event. When you RSVP, you'll need to check your MU settings to be sure you have your settings set to allow for messages from event organizers. Otherwise, you won't receive the necessary direct communication for this event. Also, if either of the hosts haven't met you in person yet, you must have a profile picture with your face visible to attend this event.
If your plans change, pls update your RSVP at least 48 hours in advance. Because this is an event that involves deciding on a recipe, getting the ingredients and cooking or baking, a lot of time and effort is put in by all attendees and hosts. Out of respect for all, we'd like an accurate headcount and spaces made available when there's a waitlist. Your cooperation is appreciated! If you’re feeling under the weather, please opt out of the event and update your RSVP, and we look forward to seeing you another time. Note, your hosts will not be monitoring the event page or MU msgs after 10 p.m. on Friday, 6/27. If you need to be in touch, pls do so before that time.
IMPORTANT additional reminders:
* Dishes should be prepared ahead of time but can be reheated at Lauren's house if necessary. Don't forget to bring serving utensils, and take them home. :0)
* If you RSVP'ed with a +1, you'll need to bring two dishes or double your recipe.
* Plan to bring a few dollars to help cover the Meetup fees for hosting a group ($330+/year!!) and give to the event hosts and that will be passed along to our group's leader, Katy. Venmo and Zelle are also accepted and equally appreciated! Katy has posted instructions for that payment option on the Discussion Page.
* Make sure your Meetup settings allow event updates from organizers. If you don't see the emails, check your spam, or social folders (for those on Gmail).
* Feel free to bring a beverage to share, alcoholic or non-alcoholic.
