This talk will cover every aspect of how professional knife sharpening is performed and includes an array of visual materials, microscope imaging of cutting edge, a mockup of the sharpening process using a block of clay, and demonstrations of Japanese waterstones.

We will learn about what tools professional chefs and sharpeners use and what common tools & misconceptions to avoid because they will ruin your cutlery. In this class, we will touch on diverse tools - from Chef Knives to Folding Pocket Knives, Garden Pruners to Woodplanes and Hair Scissors.

This talk is a pre-requisite to attend our upcoming 2-day sharpening workshop and forms our foundational learning before we get hands-on with the waterstones. I can confidently say that being able to see and understand all the invisible stuff that goes on at the knife's edge - details that make the difference between shaving sharp and mysteriously dull - will save you at least a decade of fooling around with cheap sharpening stones or giving up on sharpening altogether.

I know, because it took me that long before working 30 years as a blacksmith and pro sharpener and finally getting trained properly in the Japanese factory style. This material is rarely taught or even explained, and I am thrilled to present the inner workings of this, very useful, old-world craft.
