For our seventh week, we're heading back to Italy! Next stop is Trentino in Italy where we will learn all about Trentodoc, which is a true expression of the land it comes from. Tucked in the Dolomite Mountains of the Trentino-Alto Adige area, is the Trento DOC (or Trentodoc), probably Italy's best-kept sparkling secret! We'll spend an afternoon sipping on this lovely bubbly, which is made in the "Metodo Classico" (Italy's term for fermenting in bottle, like Methode Champenoise) instead of the Charmat method (fermented in tanks, a la Prosecco).

These wines are distinguished by a delicate, rich bouquet; a dry, smooth, rounded, and elegant flavor, and will display a lovely straw-yellow color. The pleasures of Trentodoc are more crisp and immediate than Champagne (or even it's distant cousin, Franciacorta). Since this wine hails from the Alps, with cooler temperatures, this will have a little more acidity. Plus, being from the Dolomites, the soil will have some limestone and volcanic rock. These traits in the terroir create a wine with a laser-like focus! Sound intriguing?

Trentodoc is perfectly suited to a wide range of food pairings, because of its extraordinary acidity. From your typical Italian cuisine (Pasta Carbonara, Parmigiano Reggiano Cheese, Risotto, Neapolitan Pizza), as well as apples, veal, tuna, olives, pesto, Panettone cake). One popular food pairing with this wine in Italy is Crauti e Luganega (a dish made with cabbage, sausage, and pork chops).
