Most Taiwanese tea gardens produce harvests at least twice annually--some even up to seven times--and it can feel like a never-ending adventure to wait for the next batch.

Another category of tea that can keep us on our toes is aged tea. Rather than waiting for tea to be created, we're waiting for tea to be transformed.
Let's sample a few aged teas, some aged purposefully, and others accidentally.
