# The Long Table No. 1 — Borders & Belonging

I’m hosting a small supper at my place — a shared table for people who enjoy food, conversation, and being present.

This first edition is shaped by dishes I grew up with, and those I discovered while moving between places — where flavours carry memory, identity, and story.

It’s a slow evening.
We sit together, eat in courses, and let the night unfold around one table.
Not just dinner — but a space to arrive, settle, and connect.

## About the Host

Hi, I’m Hesti.

I grew up in Indonesia and have spent the past few years living across cultures — something that naturally shapes the way I cook.

Some dishes come from memory, some from people I’ve met along the way, and some from curiosity.

I’m also the creator of Tahdig Bites — a concept built around tahdig, the crispy Persian rice, shaped and filled with classic Persian stews. I’ve been running it through pop-ups in Kuala Lumpur.

This supper is a more personal extension of that — not takeaway, but a table to sit, share, and experience the food differently.

## What is The Long Table Club?

It’s a shared table.

A mix of strangers and familiar faces, gathered for the evening — open to conversation, connection, and the experience of being present with others.

Somewhere between a dinner at a friend’s home and a cultural exchange.
You don’t just come for the food — you come to be part of the table.

## What to Expect

• A multi-course menu, served throughout the evening
• 8–10 guests seated together at one table
• Shared, family-style dining
• Dishes introduced with context and story
• A slow, unhurried evening — no fixed end

The menu is prepared using halal ingredients, and vegetarian preferences can be accommodated.

This menu brings together flavours that have moved across places and stayed with me in different ways.

A traditional Betawi spiced drink — warm, aromatic, and rooted in history

## 🍽️ To Begin — Shared Origins

Dadami Dip — herb & labneh dip inspired by family recipes from northern Iran
Kuku Sabzi Wrap — aromatic herb frittata with tomato
Noon Lavash — Persian flatbread, made to tear and share

## 🍲 Main — Comfort & Memory

Ghormeh Sabzi — slow-cooked Persian beef herb stew
Potato Tahdig — saffron rice over golden potatoes, crisped into a caramelised crust
Khiar Panir — cucumber, feta, herbs, pomegranate & toasted almonds
Olivieh — Persian-style potato salad

Risol Pisang Ijo Makassar
A warm reinterpretation of a classic — pandan crepe, caramelised banana, rose coconut custard

## 🍰 To End — A Gentle Return

Peach, Cardamom & Saffron Cake
Soft, fragrant, lightly floral — finished with rose petals

## 🍵 After — Lingering Conversations

Chai e Zafaran with Nabat
Saffron tea with Persian rock sugar

I’m keeping this small — just 8–10 seats — so it stays personal for everyone at the table.
