Taco Casserole
Uses: Large skillet/pan, baking dish
Ingredients:
- 1 pound ground beef
- 1 1/2 cup yellow onion
- 2 large bell peppers
- kale
- raw sweet potato noodles
- 2 cups cherry tomatoes, halved
- taco seasoning
- salsa
- mayo
- salt and pepper
- optional toppings: avocado, cilantro, salsa, hot sauce...
Butter Bean and Kale Stew
Uses: Knife and cutting board, pan
Ingredients:
- oil
- 1 onion
- 1 carrot
- garlic, minced
- jar butter beans
- smoked paprika
- cumin
- oregano
- red pepper flakes
- tomato paste
- canned chopped tomatoes
- vegetable stock
- Salt and pepper
- 20g hard cheese (optional)
- 2 cups kale, chopped
- Parsley (optional)
