Taco Casserole
Uses: Large skillet/pan, baking dish
Ingredients:

  • 1 pound ground beef
  • 1 1/2 cup yellow onion
  • 2 large bell peppers
  • kale
  • raw sweet potato noodles
  • 2 cups cherry tomatoes, halved
  • taco seasoning
  • salsa
  • mayo
  • salt and pepper
  • optional toppings: avocado, cilantro, salsa, hot sauce...

Butter Bean and Kale Stew
Uses: Knife and cutting board, pan

Ingredients:

  • oil
  • 1 onion
  • 1 carrot
  • garlic, minced
  • jar butter beans
  • smoked paprika
  • cumin
  • oregano
  • red pepper flakes
  • tomato paste
  • canned chopped tomatoes
  • vegetable stock
  • Salt and pepper
  • 20g hard cheese (optional)
  • 2 cups kale, chopped
  • Parsley (optional)
