But there was a price—the partition of their country, a split setting the stage for the Northern Ireland “Troubles” that didn’t end until 1998. Gain a deeper understanding of Ireland and its history with Professor Kevin Matthews, a historian and frequent Smithsonian Associates speaker who had served as a journalist covering the last stages of the Troubles in Ireland in the early and mid 1990s. He’ll discuss in depth how the Irish won independence in a two-year war between 1919 and 1921, covering topics as the role women played in the conflict, the life and tactics of the revolutionary leader Michael Collins, and the Irish development of “urban guerilla warfare” using small, highly mobile armed units called “flying columns.” Most important, this talk will examine how the conflict between Irish nationalists and Irish unionists led to Ireland’s division and later conflict. From the Easter Rising to the Good Friday Agreement, from Bloody Sunday to Brexit, this conflict has never quite gone away. As the Irish poet, William Butler Yeats once wrote: Now and in time to be, Wherever green is worn, Are changed, changed utterly: A terrible beauty is born. Professor Matthews will explore how the Irish fought to a standstill what was then the mightiest empire in the world and how, more than he could have known, Yeats’ prediction still rings true today. **Gold Mine and Great Falls Overlook. A Moderate 6.5 Mile Hike** This hike features the remnants of a quirky gold mine and the classic overlook of Great Falls. The mine was established by a Union soldier who was stationed along the Maryland side of the Potomac River near Great Falls during the Civil War. He noticed a glint of gold and after the war, he returned to the area, bought some farmland, and started mining for gold. Eventually, 30 small mines were opened by various prospectors. One of the largest mines was the Maryland Mine. A total of 5,000 ounces of gold were produced by the mines in the area, worth about $10,000,000 in today's money. Today, little remain of these mines, but there is a loop trail that passes by one of them. The hike starts near Old Angler’s Inn, passes by the mine remains, then goes down to the classic overlook of Great Falls before returning to the woods and hiking back on trails with splendid views of the Potomac River. You’ll want to make room for it all. Exhibit A: the chuleta kan kan, a two-pound pork chop-chicharrón hybrid claimed to have been invented in the late 1950s by La Guardarraya, a criollo restaurant in southwest Puerto Rico. This beautiful beast includes three sections of pig: A skin-on, bone-in loin chop remains attached to the rib and pork belly. Much of the white pork fat that often gets trimmed away is scored into square blocks, giving the specialty its distinctive “mohawk.” Mendez’s team marinates the hunks of meat for three days, then deep-fries them to order and serves them on a curvy white platter with smashed, fried plantains and a small metal caldera of white rice and pink beans. If you’re sitting at a narrow high-top for two, you’ll need a bigger table. Sourced from a small farm in Virginia, the generous portion of pork is a study in contrasts. The skin on the edge of the chop’s haircut resists your molars with an audible crunch, but there’s plenty of give in the loin, and cubes of belly practically melt in your mouth. Counteracting all that fat is an aji criollo, a thick green sauce of garlic, peppers and herbs that thrums with lime juice and vinegar. Coupled with pickled red onions and scattered cilantro leaves, the aji lifts your palate up. In search of another puckering presence to stand up to fried pork? Go for the Parchita cocktail, a blend of tequila, lime juice and passion fruit liqueur with a tangy Tajin rim. The Mexican-Borinquen theme repeats in a passion fruit tres leches cake that turns cuatro with the addition of coconut milk. While the restaurant’s name is an onomatopoeic reference to pigs — Qui Qui was also a shared nickname between Mendez and a late cousin — the chef knows his cosmopolitan audience hungers for meat-free dishes. I’m shocked to learn his soulful stewed beans are vegan. You can thank the foundation of most dishes here **—** a sofrito built on garlic, cilantro, culantro and aji dulce peppers grown by Moon Valley Farm in Woodsboro, Md. There’s no Goya sofrito here; the kitchen prepares around 32 quarts of the fresh stuff a week. If you feel like tapping your watch while waiting for the next course to come out, keep that type of effort in mind. More good news for vegetarians: Qui Qui offers the expected roast pork pernil, but also a jackfruit version. The mofongo, a molded mash of pounded plantains, also starts out plant-based, so you can order it plain if you prefer. Pescatarians should opt for the shrimp version. Shellfish propped up on the plantain mash are surrounded by herbs and a heady broth dotted with green oil.
