Derrière une tablette, une ganache ou un praliné se cachent des choix de matières premières, des terroirs, des techniques de transformation et un savoir-faire exigeant. Nous découvrirons les différentes origines du cacao, leur influence sur les arômes, ainsi que les étapes qui permettent de transformer une fève en chocolat. L’occasion également de mieux comprendre le travail du chocolatier, de la sélection des crus à la recherche de l’équilibre aromatique. La rencontre se déroulera avec Christophe Berthelot-Sampic, maître chocolatier et fondateur de l’ATELIER C, qui partagera son expérience, son héritage familial et sa vision d’un chocolat respectueux de la matière première. La soirée prendra la forme d’une présentation, d’une dégustation commentée et d’un échange guidé, avec l’occasion de découvrir plusieurs crus et créations afin d’affiner son regard sur l’univers du cacao.
