Corned Beef and Cabbage Was an American Innovation The meal that became a St. Patrick’s Day staple across the country—corned beef and cabbage—was an American innovation. While ham and cabbage were eaten in Ireland, corned beef offered a cheaper substitute for impoverished immigrants.
