Neighborhood Gems: Dishes you can't find in DC at Chef Tan!
Our NEIGHBORHOOD GEMS series features emblematic meals from around the world. This series shines a light on local restaurants and is designed to bring together inquisitive foodies and dishes that are unique and oh so worth a trip on roads less traveled!
Join us for authentic Hunan & Szechuan dishes at ***Chef Tan***!
**From Washington Post**
Chef Tan invites diners to experience the tongue-tingling pleasures of one of China’s great cuisines in an understated Vienna strip mall.
When Chef Tan opened in Vienna last July, the restaurant had no website and initially offered neither takeout nor delivery. Albert Yang, the restaurant’s regional manager, believed that diners should experience Hunan cooking at its freshest and most vibrant. “If you pack it to deliver, the color, the oil, the meat will change,” he says. This was a sacrifice he wasn’t willing to make, even if it meant losing business.
Because of the low-key opening, I didn’t get wind of Chef Tan until February. Others had clearly beaten me to the punch. On my first visit, all but the large banquet tables in the handsome, wood-paneled dining room were occupied by chattering friends. Soon, my own table filled. Thinly sliced pork belly buried under waxy, modestly spicy green peppers. Morsels of chicken sweetly perfumed with ginger and surrounded by chopped red chiles packing merciless, browbeating heat. Tender slivers of lamb, ornamented with grassy cilantro and mild, neatly diced red peppers.
As I inhaled steam abundant with chopped chiles, pungent fermented peppers and dark, sharp vinegar, I understood Yang’s stubbornness. This was not food destined for a takeout container. I floated back to the parking lot, in awe of the mastery quietly playing out between a paint supply store and a beer and wine shop in this Northern Virginia strip mall.
When your server arrives with a mortar and pestle, it initiates a little table theater at Chef Tan. They slowly agitate the contents of the bowl, breaking through a layer of finely chopped green chiles and fermented bean curd to reveal strands of eggplants and wobbling, jet-black “century” eggs. If you’re unfamiliar, they’ll explain each ingredient, talking you through the curing process that gives these eggs their striking color and butter-rich texture.
“Instead of just providing the best taste, we also want to show some culture and immersive experience,” says Albert Yang. In a region where these chile-prickling, ferment-tingling dishes are nearly impossible to find, Chef Tan serves each one with a sense of great duty. If this is your first taste of Hunan cooking, you should love it. And Chef Tan is easy to love.
Owner Kevin Tan hails from the riverside city of Hengyang, as do many of the restaurant’s cooks, and dishes from their hometown shine. In lufen, springy rice noodles come in a concentrated stock warmed with anise and cinnamon, laid with thin strips of beef shank and a handful of crunchy peanuts. In another dish, the noodles float in a light seafood stock lit with green chile heat and packing seasonal vegetables and fillets of dense, flaky fish. Yang says his homesick friends once drove as far as New York for a taste of home. Chef Tan brought relief.
Though the menu includes a small section of Chinese American standbys, the best way to orient if you feel a little lost is to take stock of what neighboring tables are eating and follow their lead. This is how I first came to know the pleasure of little river snails stir-fried with pickled long beans and the grassy nuances of tender lamb cooked with cilantro. Best of all, after four visits to my new favorite Chinese restaurant, I’ve barely scratched the surface.

Life Inside the World's Biggest Bitcoin Treasury Company
**👉 Please [RSVP on Luma](https://luma.com/pubkey-aqxx)**
Strategy holds more bitcoin than any other public company on earth, and along the way it's become one of the most talked-about, and most polarizing, names in both finance and Bitcoin. Join us at PubKey for a candid conversation with two people living inside that story: **CJ (Chaitanya Jain)**, Strategy's Head of Investor Relations, and **Ella Hough**, who leads Bitcoin advocacy at the company.
Moderated by **John Balkam**, CMO of [Sovreign](https://sovreign.io/?utm_source=luma), the discussion goes behind the headlines into what it's actually like to execute the Bitcoin Treasury playbook in real time. CJ and Ella will talk about working alongside leaders like executive chairman Michael Saylor and CEO Phong Le, navigating Strategy's role as a lightning rod for both believers and critics, and the personal convictions that brought them to the company. Expect a frank look at the strategy, the scrutiny, and the people behind the world's largest corporate Bitcoin bet.

Introductory Clinic
As a reminder, since Freedom Plaza is under construction, we will meet at the plaza in front of The International Trade Center near the National Children's Museum (on Pennsylvania Ave).
We'll begin with going over a few drills (varies week to week). The skills we drill will be for the first 30 minutes.
For the second half, we will casually skate down the bike lanes on Pennsylvania Avenue from the plaza to the U.S.Capitol and stop at 3rd St. and then skate back the same route.
This route is about 2 miles in total and is perfect for those who are new to skating in the city but feel comfortable on skates in a parking lot or roller rink. This is also great if you wish to start with shorter routes to increase your physical fitness or stamina for some of the other routes. This is an excellent opportunity to prepare to skate with others on the road. You will also get to meet skaters who will arrive for the Intermediate and Advanced skate routes following the introductory skate.
This is great training to feel prepared for the Tuesday Night and Friday Night Skate!
Route:

Profs & Pints DC: Understanding Honor Violence
[Profs and Pints DC](https://www.profsandpints.com/washingtondc) presents: **“Understanding Honor Violence,”** on recognizing and responding to harmful traditional practices that exert control over others, with Sasha K. Taylor, visiting lecturer at Ohio State University’s Global Fellowship Program and advisor and trainer in honor violence prevention.
[Advance tickets: $13.50 plus sales tax and processing fees. Available at [https://events.ticketleap.com/tickets/profsandpints/dc-honor-violence](https://events.ticketleap.com/tickets/profsandpints/dc-honor-violence) .]
People claiming to enforce traditional honor codes are responsible for a significant share of murders and other violent or abusive acts within immigrant and refugee communities. Honor-based violence and abuse often play a role in human trafficking, forced marriage, child marriage, visa-based coercion, and in the abandonment of families across international borders. Yet too often it is underreported, misunderstood, or overlooked by people and institutions with the power to help its victims.
Learn how to spot and deal with honor-based violence with Sasha K. Taylor, a former FBI Intelligence official who provides training to law enforcement, non-profit organizations, and private companies and also is extensively involved with regional organizations that combat human trafficking.
She’ll start by discussing how honor codes that have governed community life since the dawn of human civilization gave rise to the use of honor-related abuse, oppression, shame, and violence to exert control and perpetuate inequality. Although boys and men can be victims of honor-based violence, the perpetrators of it are predominantly male and the survivors predominantly female, lending support to the idea that honor violence is a form of gender-based violence. The forms that such violence can take include genital mutilation and honor killings.
She’ll discuss state and federal data related to the prevalence of various forms of honor violence and describe how complex forms of abuse are often underreported, misunderstood, or overlooked. You’ll learn about cultural and systemic barriers to disclosure, warning signs and risk factors, the intersection of immigration vulnerabilities and abuse, and the challenges that survivors face when seeking protection and services.
We’ll also look at policy responses to honor violence and how gaps within current federal immigration frameworks may unintentionally contribute to vulnerability and exploitation.
Her talk will be especially helpful for first responders, victim advocates, educators, healthcare professionals, social workers, and law enforcement personnel who are often the first point of contact during a crisis. She’ll emphasize trauma-informed engagement, emotional intelligence, cultural competency, and empathetic response strategies that treat survivors with dignity and sensitivity. (Doors: $17, or $15 with a student ID. Listed time is for doors. The talk starts 30 minutes later.)

Sharp Objects - Gillian Flynn
Join us for Sharp Objects by Gillian Flynn!
Fresh from a brief stay at a psych hospital, reporter Camille Preaker faces a troubling assignment: she must return to her tiny hometown to cover the unsolved murder of a preteen girl and the disappearance of another. For years, Camille has hardly spoken to her neurotic, hypochondriac mother or to the half-sister she barely knows: a beautiful thirteen-year-old with an eerie grip on the town. Now, installed in her old bedroom in her family's Victorian mansion, Camille finds herself identifying with the young victims—a bit too strongly.
Dogged by her own demons, she must unravel the psychological puzzle of her own past if she wants to get the story-and survive this homecoming.
"Metal Slinger" by Rachel Schneider
Join us as we discuss our June pick: Metal Slinger by Rachel Schneider!
Book description:
Even though she's not one of them, Brynn has spent her life among the Alaha, training to be a guard and waiting for the chance to attend the annual market hosted by the Kenta–the very same people who exiled her adopted community to a life at sea. Going to the market is a rite of passage eagerly anticipated by all young guards, but Brynn does not anticipate breaking a century-long peace treaty while there. Nor does she plan for the intense encounter with an enemy soldier that now threatens to unwind the fragile coexistence between their people–and everything Brynn once believed about herself to be true.
Brynn's loyalty to the Alaha is tested when the truth of her identity is brought to light by this soldier who's taken an oath to bring her back to where she belongs. Narrowly escaping death on the violent high seas, Brynn's connection to the Alaha is further tested when she learns about the world of magic she's been denied. She was once certain of her fate and where she belonged, but the dark, knowing eyes of this stranger have her questioning everything, including her heart.
Packed with knife fights and seafaring adventure, METAL SLINGER is the smash-hit start to the romantic fantasy duology, the Fire & Metal series
Unshackled - The Prisoner Wines
Unshackled will be one of the largest The Prisoners wines tasting in the nation this Thursday, hosted by Stuart, in my absence. The Prisoner Wines have several dozen white and red blended wines using unusual combinations that are very different than traditional blends from Bordeaux or The Rhone regions. ***The Prisoner Red Blend*** is comprised of Zinfandel, Cabernet Sauvignon
Petit Sirah, Syrah, Merlot, and Malbec. ***Saldo***, in the $30 range, has Petite Sirah, Grenache, Syrah, Mataro, Verdelho, and Cabernet Sauvignon. ***The Prisoner Chardonnay*** has, Chardonnay, Viognier and Gewürztraminer. You get the idea: no traditional limits in blending grapes.
I will get a table for people to gather. It will be crowded, so be patient with this very popular. Feel free to bring your own food as it is welcomed at this local gem or order from the newly opened Worthington Inn, or local favorites such as Dewey's, Everest, Jet, Worthington Tavern and The Whitney. Each person pays their tasting fee, typically $15, and gets their wine glass, then approximately five pours of the wines being served.
**Parking is tough**. Try the second lot behind House Wine accessed by the land by the back parking lot or the municipal lot one block north of House Wine.
**Waiver and Liability and Attendance Policy.** Participation by you and your guests means you agree to the Waiver of Liability and Attendance Policies on our Group Page. People who have two more or Attendance policy violations are subject to removal from the group.
