[food trailer] set-menu family-style Guatemalan dinner

This will be a family-style dinner. Specifically, I'll plan a menu from among the following dishes to include a variety of grains, meats, and vegetables. We'll share all of the dishes and split the bill equally.

arroz chino (fried rice)

carne asada (grilled beef skirt steak with rice, salad, and chopped salsa)

enchiladas mixta (a trio of tostadas:
one topped with generous ground beef and beets, and a slice of hard-boiled egg;
one with perfectly cooked fresh carrots, string beans, and salad dressing;
one with guacamole, with chopped fresh onion, peppers;
all topped with crumbled queso duro and chopped cilantro)
