Happy Eaters,
It’s been too long. Let’s share a whole food plant-based meal over zoom. We can inspire each other, share favorite recipes and cookbooks, and commune. Tonight, if you don’t feel ready to have a prepared meal you can also just get on zoom and chat.

My favorite recipe starts with three ingredients:
- Cup of lentils
- Cup of water
- Half cup of salsa
11 minutes in the instant pot. That’s a lentil taco filling. You can eat that out of the pot or put it in a taco shell or add to a salad. You can add fixins if you want. Avocado, green onions, more salsa.
