CANCELLED BECAUSE (alas) NO ONE SIGNED UP, even after two announcements.

But I'm leaving it here to show an example of the kind of events that we could have. Contact me via post or Meetup Messages if you would like to manifest the vision of this group: connection around whole-food shared meals, and support in reaching goals to eat a more healthful diet.

It requires some preparation to host an event like this, and prepping when no one has RSVP'd feels too "iffy." (I canceled by setting the RSVP limit to 1. I was automatically RSVPd as the creator of the event.) I'd love to host events like this sometime. Send me a note with your available dates.

Let's make (and Eat!) delicious Buddha Bowls. I'll provide plenty of Kale and Quinoa (for 8 large servings) and you provide two ingredients for 8 as well, and we'll see what we get! Comment on this event page or respond via email and share what two ingredients you'll bring.

I'll have a simple soup and dessert too. (Probably Cream of Celery soup, and Chocolate-Cherry Banana Nice Cream)

Here are some suggested pairings:

### Person 1: (Margie)

  • Quinoa: 3 cups dry – to cook and fluff
  • Kale: 16 oz – to serve as a base

### Person 2:

  • Tofu: 4 blocks (14 oz each) – cubed and baked with organic sprinkle
  • Garbanzo beans: 4 cans (15 oz each) – drained and roasted or seasoned

### Person 3:

  • Avocados: 6 – sliced or diced just before we eat (that's enough, those are expensive; Just be punctual if you pick this one)

### Person 4:

  • Cherry tomatoes: 4 cups – halved
  • Cucumber: 3 large – sliced or chopped

### Person 5:

  • Green cabbage: 1 head – shredded
  • Red cabbage: 1 head – shredded

### Person 6:

  • Hummus or tahini dressing: Enough for everyone to drizzle (about 2 cups)
  • Shelled Edamame: 3-4 cups

### Person 7:

  • Pumpkin seeds: 1 cup (for garnish)
  • Lime wedges: 8 – for squeezing over bowls

### Person 8:

  • Green onions: 1 bunch – sliced
  • Parsley: 2 bunches – chopped for garnish

Organic strongly preferred. (Please don't bring carrots, as there is currently a recall on carrots.)

Please try to be on time, as it'll be a bummer to have to start eating without the whole colorful, delicious mix. We will eat a little after 6pm, and say hellos and arrange all the food before that.
