■ From the Frontlines of the Restaurant Industry to a Winemaker Born in Kanagawa Prefecture. Originally highly successful as the general manager and sommelier of a high-end Italian restaurant, Fujimaki is a pioneer who popularized the concept of "wine pairing" in Japan, curating a different glass of wine for every single dish in a course meal. However, in 2014, driven by an immense passion for wine, he decided to become a creator himself. He began cultivating grapes by clearing abandoned farmland in Nanyo City, Yamagata Prefecture, and later honed his craft training under renowned New Zealand winemaker Alex Craighead.
■ The "Banksy of the Wine World" With No Vineyards Today, the "KAZU WINE" brand he operates relies on an incredibly unconventional business model: he does not own a single winery or vineyard. Instead, he is a "nomadic" winemaker. He travels to the wineries of friends scattered across the globe—including New Zealand, Spain, and Australia—borrowing their facilities and grapes, and assists with the final blending to craft the wines.
■ Guerrilla-Style, Pure Winemaking He produces vibrant, life-filled natural wines by keeping artificial intervention to a bare minimum and drastically limiting sulfite use. Nothing else is added; there is no fining or filtering.
