Please join us for a cooking demonstration with Chef Karime Lopez at the East Blvd location of Cantina 1511. Chef Lopez is from Mexico City and has worked in 5 diamond resorts and restaurants alongside of the best chefs in the world! It is truly an honor to have her on the Cantina 1511 team.

The $45 fee includes a demonstration by Chef Lopez on how to create the tasty meal, an Authentic Mexican Cocktail, the meal itself, and a copy of all recipes. They encourage guests to ask questions since it is meant to be a fun, informative, and wonderful event for the tastebuds!

EVOLUTION
To understand the philosophy of Cantina is to know its owners. It all began with an appreciation for the way Mexican food is traditionally prepared. Unique by comparison, long before four walls were built, the inspiration for Cantina 1511 was born far from Charlotte in a place called Oaxaca, Mexico. Co-Owner Frank Scibelli, traveling on one of many trips to the region, became inspired to bring genuine Mexican cuisine to the Queen City. The evolution of Cantina 1511 was a highly involved labor of love that has resulted in one of Charlotte?s most beloved dining establishments.

SUSTENANCE
The restaurant?s culinary team takes pride in finding great farms and resources to produce authentic, delicious dishes. Scibelli and the culinary staff are self-described ?foragers? who find ingredients from local growers and import chilies and other ingredients from Mexico, which help give Cantina?s menu its authenticity. Cantina features tortillas and cheeses homemade in house. From learning about the subtle differences in chiles to spending copious hours in Mexican markets with renowned Mexican chefs, Scibelli was exposed to the ?real thing? early on. Relying on boutique producers and artisans, the Cantina 1511 menu reflects the time Scibelli spent with some of Mexico?s most respected chefs and in their cooking classes. The menu replicates the regional differences between northern and southern Mexican cooking. Staying true to the cuisine is the framework for Cantina 1511?s everything-from-scratch mentality. The culinary team practices meticulous control over the ingredients used from sauces to main courses, deserts to drink specials. Everyone can find something on the Cantina 1511 menu to sing about.
