Google Analytics - going deeper?

First off, thank you all for your input to this forum.  I am learning so much.  

Second, full disclosure - I do not consider myself a tech person and, although I fully respect those who are, I do not attain to be one.  I am a producer/director that owns a production company whereby I hire tech people I need. 

So, here's my question - probably obvious to most of you:

I am working on learning Google Analytics.  I am a bit confused by the way in which they present data. Basically, the numbers I am looking for are for different demographics and how much they log onto the site by the hour. I know this information is provided in the 'real time' section but I was wondering if you knew how to either transfer that data onto excel, or if there was a way in which I can just access it directly.  I'm seeing some interesting trends and If these trends are statistically significant, this could be an awesome paper that will be published.
