Lunch at Taco Guild

Details

I had been curious about Taco Guild for some time, and finally managed to get there and check it out. The building in which it is housed has a great history (outlined below), and creates a wonderful open and unique dining experience. Their moto is "Tacos Without Borders", meaning they take a little of this and that from other cultures to create some unique offerings. I tried the Shrimp Ceviche which was crisp & fresh, and the Chipotle Cherry Steak Taco. The taco was served on a fresh in house made corn tortilla, the meat tender and flavorful, all garnished with bleu cheese, chipotle aioli, and poblano and onion straws. I would order that taco again without any reservation, except they have so many others that look good as well. Menu and food pictures posted below.

History of the Building - From the Web:
From Schoolhouse to Sanctuary

  • 1893*:*
The building began as Smith's Chapel, a one-room schoolhouse on the outskirts of Phoenix, after George and Edna Smith donated the property.
  • 1894*:*
It was renamed Bethel after Edna's former church in Illinois and was initially a modest brick building.
  • 1914*:*
A larger church building was constructed next to the original, with female parishioners fundraising by selling food at the state fair.

Fire and Renewal

  • 1911*: The original building was severely damaged by a fire.*
  • 1955*: The building was renovated after decades of disuse, and a new cornerstone was laid to commemorate the renewal.*

Repurposing and Restoration

  • 2012*: The property was vacated and deconsecrated.*
  • ~2014*: The building was restored and repurposed into the Taco Guild restaurant and bar.*
  • Current*: The restaurant preserves the building's history by keeping elements like its dark wood ceiling, support beams, and original stained-glass windows, while repurposing the altar into the bar*.
