The ever-popular Indian Feast, updated for springtime! We will incorporate healthy cooking basics and cook up a memorable and delicious Indian meal. We'll use loads of Indian spices, talk about to make sure your pantry’s stocked with all of the fragrant spices that are an integral part of Indian cooking, and discuss how to balance flavors to make some supertasty dishes that you will want to cook again and again.

The dishes taught in this class are a mighty assemblage of some Indian favorites that I have taught over the past couple of years. There is a classic and brightly-flavored Chana Masala with chickpeas and tomatoes and the cooling Cucumber Raita which goes perfectly with it. Then there is a simple but fabulous potato dish, easy to throw together and let simmer while you make the Coconut Chutney to serve with it to elevate the sublime factor. This chutney receives raves from most everyone who tastes it, with a unique flavor that pairs deliciously with the potatoes. Then we'll make a quick and easy stir-fry recipe that you can use for just about any vegetable out there: green beans, asparagus, snap peas, even carrots. Each of these dishes on its own is a surefire winner, but together they will rock your tastebuds with their fresh flavors and vibrant colors. Dinner will be colorful and delicious for sure, and these classic recipes are keepers.

Class Details: Classes are all held in my beautiful and comfortable kitchen in Oakland and have about 5 or 6 students each. Each class is meant to teach you as much as possible in the time we are together - about home cooking, local food sources, and general tips to make delicious and healthy food easily. After we cook, we get to sit down together to dine and connect, talk about food and its many issues, and have a little party of community and great food around the table. They are really FUN!

Cooking is done with the highest quality ingredients possible, adhering to the idea of SOUL food: Seasonal, Organic, Unrefined and Local. As much as possible is purchased at local farmer’s markets in the East Bay. Classes are vegetarian unless meat is featured explicitly.

6:30-9:30pm in North Oakland, a 15 minute walk from the Rockridge Bart station and only a few minutes from the 51st/MLK exit off Highway 24. Exact directions will be sent a few days before class.
