Eugene Veggies is a group for everyone who enjoys the benefits of a plant-based diet and seeks to share community and events with like-minded individuals. It is also for flexitarians and omnivores who would like to learn more about the benefits of eating a plant-based diet.

Cooking Demo - In Person! - Picnic Food

This will be our first event back at my house (well, my back yard) since early 2020. Woo hoo! We will be cooking (and sampling!) Rye Berry Salad and Black Forrest Chia Pudding. Both from: How Not To Diet Cookbook, a book of WFPB (Whole Food Plant Based) recipes.

Don't let the healthiness of these recipes scare you. They are delicious! Here's what I wrote for myself after trying the Rye Berry Salad: "Perfect for a picnic. potluck or everyday summer dish. Tastes good right away, but also tastes good next day or at least a few hours later. The rye berries make a nice change of pace for the grain for this type of salad. It's very mild so the other flavors in the salad pop."

And if you like the flavors of dark chocolate and cherry, you are going to LOVE the black forest cherry pudding. It's really amazing how good this tastes given there is NO sugar in this recipe. It is sweetened entirely with fruit. This is another dish that would be great for a picnic.

Normally we cook together, but in a nod to covid, this time I'll assemble the dishes in front of you. What will be the same is all the tips and tricks and health information that I give with each recipe.

It doesn't get easier! You just show up and watch and eat. You will totally see how it is done and leave with the recipes. And when the food is ready, we will split the food among ourselves for a tasting. Depending on how many people sign up, there may also be extra snacks around.

Also, there will be plenty of time for chatting and getting to know each other.


  1. Vaccines - Everyone attending who is over 5 MUST be fully vaccinated.
  2. This will be outside if weather permits. You may need to bring a chair. If the weather does not cooperate, then we will congregate in my living room with the windows open and my air purifier running.

Masks are optional.

This event costs $5 per person to cover the cost of food and supplies. Please bring exact cash.
