Eugene Veggies is a group for everyone who enjoys the benefits of a plant-based diet and seeks to share community and events with like-minded individuals. It is also for flexitarians and omnivores who would like to learn more about the benefits of eating a plant-based diet.
January's recipes are about exploration and fun. Oh and reeaaallly good flavor! These recipes are easy and relatively healthy and give you something unique to chow on. The tapioca recipe has a sugar-free version (made with dates as sweetener) along with a traditional sugar-based version. If you like gingerbread cookies, I think you will love this (JJ original) tapioca recipe.

You can watch this talk as a demo. I'll provide full recipes to all attendees after the event. If you want to follow along on one or both of the recipes during our event, let me know and I'll get you enough information ahead of time to be prepped and ready to cook with me. If you cook with me, then by the end of the event (or soon after), you can taste these lovely creations yourself.
I'll be making both recipes very simple/easy by using an electric pressure cooker. No worries if you don't have a pressure cooker though. I will be providing stove top directions for both recipes too. Other than that, you pretty much just need the normal stuff: measuring utensils, knife. The date version of tapioca uses a blender.
