In this online cooking class, I’ll show you how to make a truly delicious vegan risotto: clear in flavour, satisfyingly filling, and easy to digest - all without butter, cheese, or substitute products.

We’ll cook a Risotto ai Funghi Porcini using dried porcini mushrooms. Rather than following a rigid recipe, the focus is on understanding the fundamentals of risotto: heat, liquid, timing, and texture.

This way, you’ll learn how risotto really works and how you can later adapt it using different vegetables, herbs, or mushrooms.
