Lanzhou noodles have won the reputation of "Chinese first noodle."

I bookmarked LA Noodle (along with other Asian noodle restaurants) pre-Covid, about 6 or 7 years ago.

LAN makes traditional hand-pulled noodles in an open kitchen. You can see the chefs doing their craft.

9 different types of noodles:
thick round, thin round, thinnest round, wide flat, thiner flat, chives levess flat, trinagle shaped noodles and more.

Each bowl comes with slices of beef, daikon radish, chile oil, scallions, and cilantro.

The broth is similar to pho. Slow simmered with beef and chicken bones, 28 herbs and spices.

In the city of Lanzhou, with 3 million people, this noodle soup is a daily life staple, sold on every street corner.

The menu is fantastic. I am a sucker for watermelon juice as that was one of my favorite food items when I was Shanghaied in Shanghai and stuck there for a month in 2013. Their exotic drinks include braised pear with rock sugar.

Appetizers include:
smashed cucumbers
celery peanut salad
spicy fried tofu
kelp salad
chicken gizzards

Special dishes include:
BIG platter chicken from northwest China
Sweet chili chicken

Noodle Soups, which are their specialty, INCLUDE:
THE LAN SIGNATURE DISH
braised beef
spicy beef
Lanzhou street noodles with no meat but w sesame & peanut butter soup base

CHINESE BURGERS: In existance centuries before McDonald's
Include either pork, lamb or beef

Roujiamois a meat sandwiched be bread. It's a street food. A baijimo is a type of flatbread.
