There seems to be a lot of interest in this one and it's one that I've wanted to do as well. Cooke's Peak was a land mark on the Butterfield trail, tops off at ~8400' and should have some spectacular views.
According to Magee this is an extremely strenuous 10 mile hike with a 3000' gain in elevation and a trail that's difficult to follow in places. This hike is not recommended for inexperienced hikers.
It's about a 1.5 hour drive to the trail head and I'll get some better maps by then.
