Zaytinya (pronounced zah-tin-YA) means "olive oil" in Turkish, and it's also the name of acclaimed chef José Andrés' popular restaurant concept focusing on the fresh, vibrant small plates (mezze) of the Eastern Mediterranean, specifically Turkish, Greek, and Lebanese cuisines. The name reflects the importance of olive oil in these dishes, and the restaurants serve modern interpretations of these traditional flavors.
