Junko
Junko Hamilton is a Japanese cooking specialist. She has worked as a cooking instructor, menu coordinator and food writer in Japan and Ireland.
She moved to Dublin in 2008 and has since being promoting authentic Japanese cuisine in Europe. She taught cookery to transition year students and runs cooking demonstrations and lectures on Japanese cuisine. Junko has a deep knowledge of the culinary arts and in particular the relationship between food and health, including Macrobiotics and the fermentation in
Japanese food. Junko now lives in Japan and is returning to Ireland to teach a series of cookery classes every year since 2015.
Miso is one of the essential Japanese condiments which has extraordinary health benefits. It is made from soy beans, salt and *koji *(malted rice) and simple to make.
Participants will make enough Miso to take 2 kgs home for personal
use through out the year.

*Time: 2:00 - 5:00

*Cost: 75 euro Includes 2 kgs of Miso to take home, Instruction sheet and a snack will be served afterwards.
*You Need: A glass/ ceramic/ enamel coated *wide-mouthed jar, 2.5 to 3 litres, an apron , and a small towel.
*Booking required as places are limited to only 6-8 students!
