frequently i am asked "what should i make for dinner?". whenever i suggest risotto people freak out. "NO WAY!!!! that's too difficult"

how surprised they'd be to find risotto takes only about 25 minutes and can be made with a variety of ingredients that are already in your larder: rice, stock, canned or frozen vegetables, nuts, cheese, etc . . .

so, please join me to learn a new technique, not just a few recipes. once you master the technique you can make risotto with whatever you have on hand or dream up your own culinary masterpiece and head to the store for some premium ingredients.

this will be a small group which will allow us to get down and dirty. working in threes, each group will be able to make their own batch of risotto to share and if there is time we will also make a sweet risotto that is a spin on a favorite thai dessert of mine.

we will also talk a bit about the history of risotto, different kinds of rice, alternatives to rice, and some of the regional Italian risotto dishes.

please bring a bottle of wine (perhaps something Italian?) or other beverage to share. i always drink a glass of white wine while i am stirring the rice!!!

we have an influx of new members, so i expect to see many new faces :-)
