Foodie Adventures, The Big Easy; New Orleans-Post for Interest Only

This post is to gauge interest in Destination Eats travel to New Orleans, LA (Louisiana). Travel will be in January. If RSVPing please expect communication and details to be sent by Meetup direct message and email.
I have never visited New Orleans but am interested in going to explore the culture, history, and unique flavors from the origin of Cajun and Creole cuisine.
This foodie adventure will be focused on New Orleans' influence in the culinary world and some history.
Our agenda will likely include:

• Mardi Gras World (Where floats are assembled) Tour
• New Orleans Demonstration Cooking Class with Meal OR Hands-on Cajun Roux Cooking Class in New Orleans
• Steamboat or Queen Paddlewheeler Historic Mississippi River Cruise
• New Orleans Small-Group Haunted History Carriage Tour (1 hour ride around Jackson Square)
• Optional: City Sightseeing Hop On/Off Tour

Expect to dine at the following establishments:

• Dooky Chase an important institution and safe haven during the Civil Rights Movement; Founded by prominent Chef Leah Chase, the Queen of Creole Cuisine.
• Cafe Du Monde established in 1862 in the New Orleans French Market open 24/7 serving a simple menu. CDM is home of the chicory coffee and famous deep fried doughnut beignets, brought to New Orleans by French colonists.
• Pat O'Brien's established as a legal watering hole in 1933 immediately after the repeal of Prohibition. The Hurricane, a fruity cocktail born of an excess of supply of rum was crafted by Pat O'Brien himself in the 1940s.
