This will be a paid meetup (SGD$30). You will receive an actively fermenting milk kefir culture with kefir "grains" to take home.

Milk kefir is a powerful probiotic food. It is generally fermented from cow's milk, although it can be fermented from the milk of other animals as well. You will have the opportunity to smell and drink an exemplar of healthy milk kefir.

The particular milk kefir that I ferment has a very sharp and sour taste. It is an acquired taste, but one that is quickly adapted to. Other fermenters are free to ferment for shorter periods to realise a milder taste.

I will demonstrate each and every step of the fermentation process, including:

• Separating the kefir "grains" from the milk kefir (different techniques for encouraging and discouraging kefir "grain" proliferation);

• Remixing the "grains" with a small amount of milk kefir as a starter for the next ferment;

• Mixing milk kefir and milk for a second ferment (useful to leverage a reasonable amount of milk kefir from a relatively small colony of kefir "grains");

• Instructions for preventing milk kefir from acquiring an unpleasant taste;

• Instructions for quickly growing your colony of kefir grains for comfortable milk kefir production or kefir "grain" sharing; and

• Suggestions for mixing the final milk kefir for a more evangelistic taste.

WARNING:

Milk kefir can have an almost immediate effect on some people's intestines. Please be aware that it is quite likely that you will want to toilet within an hour of drinking milk kefir if you have not drunk it before.
