Learn to Ferment Kombucha

This will be a paid meetup (SGD$30). You will receive an actively fermenting kombucha culture with a mother (kombucha scoby). Please bring your own glass or plastic jar (roughly 500ml). For anyone who is bringing a +1, your guest need not pay a separate meetup fee unless they would like to take home their own kefir culture.

First ferment (14 litre glass cylinder).

Second Ferment (Pineapple juice, 1 Litre).
You can buy an actively fermenting 2nd ferment in glass bottle for $10, fermentation complete in 4-5 days.
Kombucha is a probiotic drink fermented from sugar and dark tea (other types of tea are not recommended). You will have the opportunity to smell and drink an exemplar of healthy kombucha at the end of both the first (1F) and second (2F) fermentations.
As with all of my ferments, I prefer a sharp clean taste. If this is not to your taste you are free to ferment for shorter periods of time.
I will demonstrate each and every step of the fermentation process, including:
• Tea preparation, with clear instructions for proportions and cooling;
• Siphoning finished first fermentation kombucha off for second ferment, with explanations of where and why to siphon from a particular strata;
• Mixing kombucha, juices, and distilled water for second ferment with instructions for caring for the subsequent ferment;
• Siphoning off kombucha for making a new first ferment;
• Instructions for revitalising a kombucha ferment that has been damaged or has lost some of its taste profile.
WARNING: Some people experience a phenomena called die-off when they drink kombucha. It is often recommended that first time drinkers only drink a few teaspoons of first ferment kombucha. I have not experienced this personally and view it as somewhat of a Chinese folk story. However, I expect that this may depend strongly on your particular intestinal flora distribution. If you suspect that your intestines may not have a healthy population of beneficial bacteria, I would suggest going slow.
