Warm cauliflower, Pickled cauliflower, Haricot Verts, Anchovies (optional)

A2) Blue Swimmer Crab Salad

Nan Jhim Jelly, Oven Roasted Tomatoes, Sugar Snap Peas, Green Peas, Bread Chips.

A3) Escargots

Half a dozen escargots with a garlic, herb butter white wine emulsion, served with Crostini

Main Courses

M1) Shoulder Tender 200grams

200day Grain Fed Australian Angus.

Served with Mashed potatoes, Confit shallots, Roasted Parsnip and garlic.

M2) Sakura Chicken

Poached Chicken, crispy skin, Kipfler potatos, Roasted Pepper Coulis, Roasted Peppers.

Braised lamb shank, pan seared lamb rump, Cous Cous with Roasted Peppers, garden salad.

M3) Salmon

Quinoa and Barley, Shaved Fennel apple salad, Botarga

M4) Mushroom Pasta

Roasted Mixed Mushrooms, Sous vide egg and truffle oil.

D1) Dark Chocolate with kumquat
