More than a restaurant, Root Down is a neighborhood nexus and sensory rabble-rouser, where seasonal flavor meets gas station architecture and offbeat eBay finds. Since 2008, this LoHi landmark has earned a cult following for its globally-inspired, vegetable-forward menu built around sustainably sourced ingredients, much of it pulled straight from their own 6,000 sq ft backyard garden.
Root Down is part of Edible Beats, a 100% employee-owned Denver restaurant group that is wind-powered and committed to certified humane proteins, MSC-certified seafood, and responsibly grown produce.
