Want tasty plant-based meals that nourish your body and work with your life? Join us for an engaging presentation by dietitian Lauren Plunkett, on affordable, healthy vegan eating. After the presentation, we’ll make a flavorful, easy dish with cannellini beans, and sample it together.
At this event, you’ll:
- Learn how to create well-rounded plant-based meals with practical tips from an expert.
- Gain confidence in meeting all of your nutritional needs without animal products.
- Get answers to all your nutritional questions and curiosities in an open Q&A session.
- Make and sample a delicious, nutritious bean dish together.
- Get to connect with other people with similar questions and making similar dietary changes.
Whether you did Veganuary this year, are totally new to vegan nutrition, or are exploring healthier or more ethical eating in general, this event is for you!

Lauren Plunkett, RDN, LDN, CDCES, is a registered dietitian, certified diabetes care & education specialist, global health educator, and speaker. She is the author of the award-winning book, Type One Determination, her story about coming of age with Type 1 Diabetes, and a guide - complete with a nutrition and exercise protocol - for living a healthy, athletic life.

Join CAA to serve a vegan lunch at Simpson Housing Services! Simpson provides shelter to around seventy unhoused people each night, and partners with community groups to prepare meals for shelter residents. This is a wonderful way to care for our Minnesota community in an animal-friendly, eco-friendly way.
The lunch will be at 128 W 33rd St. Minneapolis, MN 55408. We will gather at 10:00am to meet and greet one another. Together, we’ll prepare lunch in the kitchen, and serve food to residents. Once food service comes to a lull, we will take breaks in small shifts to join the residents for lunch. Afterwards, we’ll tidy up, and everything should be finished by 1:00pm.
CAA provides a meal for Simpson guests every month. Watch this space for another opportunity to participate!
Other Notes:
- Please dress comfortably, with closed-toe shoes.
- We expect to serve about 25 residents.
- Please keep in mind that this is a community service event. While we may explain more about CAA’s work or veganism if residents ask, it is not an outreach event.

Join Tamuno Imbu, CAA’s Community Organizer and chef extraordinaire, for a fun and interactive online cooking class where you’ll learn how to make a delicious and hearty Vegan Jambalaya! Whether you’re a fan of Cajun flavors or looking for a new go-to comfort meal, this dish is packed with spice, texture, and plant-based goodness.
### What to Expect
Tamuno will guide you step by step, making the process simple and approachable for all skill levels. You can watch and learn or cook along in real time if you gather the listed ingredients. By the end of the session, you’ll have a flavorful, satisfying meal perfect for sharing—or saving for later!
No matter your experience level, you’ll see just how easy and enjoyable it is to make wholesome, plant-based comfort food.

If you’d like to cook along, have these ingredients on hand:
- 2 tablespoons olive oil (30 ml)
- 14 ounces vegan Cajun sausage, sliced into rounds (397 g)
- 3 tablespoons vegan butter (42 g)
- 2 tablespoons flour (14 g)
- 1 yellow onion, chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 ribs of celery, sliced
- 3 tablespoons Cajun seasoning (21 g)
- 4 cloves garlic, minced
- 1 ¼ cups basmati rice (262.5 g)
- 1 (14.5-ounce) can diced tomatoes (411 g)
- 2 ¾ cups vegetable broth (651 ml)
- 2 teaspoons dried basil (2.8 g)
- 1 teaspoon dried thyme (1.4 g)
- Salt and pepper to taste

Cooking with Tamuno is an online cooking class offered monthly on a chosen Monday from 5:30 – 6:30 pm. CAA’s Community Organizer, Tamuno Imbu is our resident chef extraordinaire. Each month, he selects a vegan recipe that is particularly tasty and easy to make. During the class, he slowly and clearly demonstrates the steps to make the meal. He is also more than willing to take questions — he wants to be sure you walk away with the ability to make each recipe on your own.
He shares the ingredients ahead of time so that you can purchase them and cook along in real time. But it’s also okay to just sit back, watch, and learn. No cooking experience is required as he gears this for people who are new to plant-based cooking.## All are welcome to cook
Everyone is welcome at these fun online events. Join Tamuno and learn some plant-based cooking skills, all while having an opportunity to meet some of the youth and other participants. You will come away with new recipes and some handy cooking tips. Be prepared to impress your friends and family with your new-found skills! Or better yet, bring them along to the class so they can get these skills for themselves too.
Young people frequently join the classes through relationships with partner organizations. Tamuno also works with these youth in other ways, including leadership programming and introducing them to the issues surrounding living a more compassionate lifestyle.## Find more vegan cooking recipes and resources
