Join the Amsterdam Food Lab for a hands-on session exploring what actually makes fresh pasta so damn good.
This isn’t a traditional cooking class where you simply follow a recipe and go home.
We’ll get our hands dirty, experiment with dough, shape pasta, cook together, and — most importantly — eat a lot of it.

Why does one pasta dough become silky and elastic while another turns tough?
Why does pasta sometimes fail to hold sauce?
What’s the difference between flour, hydration and resting?
And why does the shape of your pasta actually matter?
We’ll break down the fundamentals of fresh pasta and experiment with:

🔪 Pasta shaping
🔥 Cooking & texture
🥫 Matching pasta with the right sauce
You’ll learn the principles rather than just memorising a recipe — so you’ll be able to make great pasta long after the evening is over.
🍝 Then we eat
After making our pasta from scratch, we’ll cook it together and sit down for a proper communal lunch.
Expect good food, drinks, plenty of flour everywhere and a relaxed atmosphere where it’s easy to meet people.
