Peking duck (different to the simpler Knüsprige Ente) is distinctive for its ultra-crisp, lacquered skin and the contrast with tender meat. The duck is air is pumped under the skin to separate it from the fat, then it is seared and coated with a maltose syrup glaze, hung to air-dry for many hours so the skin tightens, and finally roasted at high heat in a specialised oven. Sinohouse is regarded as the most authentic place in Vienna for Peking Duck. Normally when you go here you can only have it as a multi-course menu for €77 each.
