Chef Cheenu is a UX Researcher and proud Austinite who loves to make healthy, vegan versions of classic recipes. For this cooking demo, he will be demonstrating how to take quintessential Indian recipes and provide a vegan and healthier spin on them. Everything is completely vegan, soy free, nut free, and gluten free.

This demo will showcase a mix of comforting classics and fresh, bright flavors, including:
🍚 Chef Cheenu's Signature Quinoa Pulao — a pulao/pilaf but with quinoa instead of rice, mixed with veggies and very easy to make in an Instant Pot.
🍛 Spinach Dal — a comforting soup/stew-like dish with spinach and Masoor Dal (red dal), also made in the Instant Pot.
💛 Zucchini Kofta Curry — a vegan and healthy version of Malai Kofta featuring kofta balls made out of shredded zucchini with chickpea flour and spices, shallow fried with an oppi pan and smothered in a spicy tomato gravy.
