VSDC is excited to continue the Eat Smart Cooking & Nutrition Series! Each class will be completely vegan and provide a food demonstration of creative and healthy yet simple-to-prepare dishes, Q&A, food sampling of the prepared items, nutrition information, and time to mingle and socialize.

[NOTE: this series is different from the Eat Smart Program that VSDC founded in 2004 but incorporates some of the key elements of that program.]

This session will take place from 2-4 pm in downtown Silver Spring MD – just about 1/2 mile from the Silver Spring Metro station (Red line). There is street parking within 1 block (should be Free on Sun but be sure to read signs carefully and follow parking instructions).

Our presenter for this very unique presentation is Mark Sutton*. Mark will demonstrate how to prepare delicious, healthy, and creative vegan pizzas: shaping dough, arranging fillings, and making “cheese-like” topping sauces. Recipes are from his book (the 1st Vegan Pizza Cookbook): “Heart Healthy Pizza (http://www.hearthealthypizza.com).” Autographed copies will be available for $15.

This class will include the preparation of four heart-healthy vegan pizzas (with sampling!):

PIZZA 1:
CRUST: Whole Wheat and Black Beans
FILLINGS: Kale, tomatoes, cauliflower, mixed sweet peppers, and sliced onions
CHEESE-LIKE TOPPING: Millet, Sunflower Seed, and Chili Garlic Sauce

PIZZA 2:
CRUST: Russian Pumpernickel (with caraway seeds)
FILLINGS: Thousand Island-style Dressing, mixed green and red cabbage, red onions, and mushrooms
CHEESE-LIKE TOPPING: Oats, Cannellini Beans, and Horseradish Sauce

PIZZA 3:
CRUST: Oat Flour (gluten-free)
FILLINGS: 8 Vegetable mix (red and green cabbages, carrots, broccoli, jicama, bell peppers, radishes and celery), Balsamic Vinegar
CHEESE-LIKE TOPPING: Tofu Ginger Sauce

PIZZA 4:
CRUST: Basil Flecked White Dough
FILINGS: Tomato sauce, vegan sausage, artichokes, onions, and black olives
CHEESE-LIKE TOPPING: Quinoa, Sweet Potatoes, and Corn Sauce

The low fee for this class is $20 per person (for full VSDC members, we discount this fee to only $15). We have room for about 25 attendees and expect this class to fill up quickly. Please RSVP ASAP. It’s first-come, first-serve, payment will be required in advance, and no refunds will be possible. All proceeds from these classes will benefit VSDC’s important work in outreach, education, and community-building.
