I recently had the BEST Pad See Ew dish that I've ever tried. I happened upon this culinary delight thanks to member Sara, who told me about the new Thai restaurant: Chaiyo Thai Bistro. A lot of Thai places will simply remove flavor when making a dish vegan, but these people managed to keep all the flavor in!
The icing on the cake is that they are able to handle a relatively large number of people. Since attendees at the last Eugene Veggies event overwhelmingly requested another restaurant event, Chaiyo's is the place we must go to next. :-)
ORDERING
Please remember that while we happily welcome people of all diets, all Eugene Veggies events are vegan. Participation in this event means that you agree to order only vegan food.
Most of the dishes at Chaiyo have fish paste by default. However, for the noodle and stir fry dishes, you can request the dish be made vegan and they will replace the fish with a special mushroom paste. Curries and soups canNOT generally be made vegan.

RSVPing
Note that I am coordinating this event with Chaiyo. They will be working to have enough supplies and staff on hand based on our RSVP count. So if you have an RSVP a few days before the event, please honor your RSVP. The exception is if you are sick of course. :-)
There is an RSVP limit. Meetup will maintain a wait list as needed and notify you if a space becomes available. If your plans change and you are still on the wait list, please change your RSVP so that others can move up.
MORE INFORMATION
I will be sending out an email a day before the event with more information such as finding the restaurant in the large strip mall area and parking. If meetup fails to send that message, please let me know so I can try it again.
