I have some delicious, super-easy recipes: Vegan feta cheese (original version shared by members Ron and Kurt), pilaf, and lemony dressing which, along with a few other easy ingredients, come together to make a gourmet dinner/salad that *anyone* would enjoy. This dish is easy, satisfying, and WFPB (Whole Food Plant Based - the gold standard in healthy eating).
Also, you can take any one of these elements and make them the base for many other dishes. These are all great ideas to have in your back pocket. Also, we will explore a surprise, special ingredient.
Add in a door prize, fun people to talk to, recipes to take home, and a Great Dane to monitor the floor, and you won't want to miss this one.
FETA: This recipe is not only delicious and easy to make, but it is about 1/2 the calorie density of dairy feta. You can learn why calorie density matters and see for yourself how creamy and yummy this recipe is by coming to this event.
PARTICIPATION: I will be seeking volunteers to help with some of the chopping, etc off to the side. Helpers will still be able to see and hear everything. It is totally cool if you just want to watch. Alternatively, if you are willing to help make this dish with me, it will be appreciated. :-)
COST: $10 cash per person.
And that's it! You do not have to bring anything else. I'll supply all the food, equipment, recipes, etc.
NOTE: With the high cost of food now a days, the $10 may just cover my costs for this one event. If there is any leftover money, it will go to covering the costs of this group, which I normally pay for out of my own pocket (along with the occasional donation which is very appreciated). You might be surprised: running Eugene Veggies incurs a lot of costs, including the *ridiculously* high fees that meetup charges. It would cost you at least $10 to eat dinner out, and that would not include entertainment. Bottom line is: I hope you will agree that $10 for this event is a good deal .
RSVPs: I buy supplies and then do prep for this event based on the number of RSVPs a few days ahead of the event. When people cancel last minute, others on the wait list are not likely to be able to fill your spot. So, unless you are sick, please honor your RSVP .
ATTENDANCE LIMIT: There is a limit of 20 people. The good news is that meetup will maintain a wait list and people do cancel. So, RSVP if you want to come and see what happens.
