Sacramento-area restaurants are featuring special vegan menu items created just for the Challenge throughout October. Diners have the opportunity to enjoy delicious, healthy meals, review/rate menus, and vote for your favorites.

Impossible Meat Sweet Potato Tostada: Roasted sweet potato, Impossible "meat," avocado-jalapeño salsa, pico de gallo, avocado, and pickled red onions served on a crispy corn tortilla.
