# Our Manifesto

Is coffee just a drink?
We believe coffee is more than a beverage. It reflects the history, culture, everyday life, and values of the city where it is found.

Since around 2015, Tokyo has emerged as one of the world's most exciting coffee destinations.
That's why our role is not simply to guide people from one café to another.
As we explore the city, from traditional kissaten to independent specialty coffee roasters, we seek to understand the stories behind each place.

- Why is this café here?
- How did Tokyo's coffee culture evolve into what it is today?
By exploring the history, culture, and people behind every cup, we uncover the stories that shape Tokyo's coffee scene.

Our mission is to share the culture of this city with the world through Tokyo's coffee culture.

# Our Manifesto

コヌヒヌは、ただの飲み物でしょうか。
私たちは、コヌヒヌはその街の歎史や文化、人々の暮らしや䟡倀芳を映し出す、䞀぀のカルチャヌだず考えおいたす。

2015幎頃から、東京は䞖界が泚目するコヌヒヌ郜垂ぞず発展したした。
だから私たちの圹割は、カフェを案内するこずではありたせん。
街を歩き、喫茶店から個性豊かなスペシャルティロヌスタヌたでを蚪れながら、
「なぜ、この店はこの堎所にあるのか。」
「東京のコヌヒヌカルチャヌは、どのように育たれおきたのか。」
その背景にある歎史や文化、人々の物語を探求しおいたす。

私たちのミッションは、東京のコヌヒヌカルチャヌを通しお、この街の文化を䞖界ぞ届けるこずです。

    Let’s explore SCAJ 2026, one of Japan’s largest international specialty coffee exhibitions.
    The event brings together coffee producers, roasters, suppliers, coffee brands, equipment makers, chocolate producers, and other food-related companies and professionals from around the world.
    While enjoying a variety of coffees, Coffee Culture Guide Toyo will introduce selected roasters, brands, and manufacturers to check out.
    We’ll also touch on topics such as coffee origin, production methods, and sensory evaluation, making this a great opportunity to deepen your understanding of coffee.
    No special knowledge is required. Anyone who loves coffee or cafés, or is simply curious to learn more, is welcome to join.

    Participants will receive an SCAJ invitation code from Toyo, so there is no additional admission fee.

    Toyo — Coffee Culture Guide
    Toyo is a Tokyo-based Coffee Culture Guide and the host of Tokyo Coffee Tour, introducing guests from around the world to Tokyo’s specialty coffee, Japanese kissaten culture, local history, and the stories behind each cup.
    She has traveled to 31 countries and visited more than 1,000 coffee shops, conducting coffee research along the way. Drawing on both global and Japanese coffee culture, she creates tours and events that help people discover and understand coffee more deeply.
